  • About

Directly translated, gordita means “chubby” in Mexico. Gorditas are exactly that: chubby little tortillas that make fun vessels for a birria snack. Unlike a tortilla, gorditas are cut open on one side in order to be filled with ingredients.

Ingredients

Dough

  • 1 cup (125 g) masa harina
  • 1 cup (240

Method

Make the Dough

  1. Slowly add the warm water to the dry masa flour in a bowl while constantly stirring. Stir in the salt.
  2. Knead until the water is evenly incorporated and no dry, powdery spots remain. The masa should be moist to the touch but not tacky. If it’s too wet, add a bit more masa.
  3. Heat a comal or large skillet over medium-high heat.
