I will never forget the first time I ever tasted queso fundido. It was the late 80s and I was a kid watching Miami Vice with my parents. My mom wanted to make a quick snack, so she whipped up some queso fundido. It was so simple, just really cheesy and rich in the most delicious way. She made hers with chorizo and I’m my own person, so this version is made with my beef birria and a few more ingredients than hers. Still though, thanks, Mom, for the inspo.
