Name: Playing Dice
Yield: Makes 1 die, Serves 16
Ingredients: icing sugar, to dust; 200 g icing sugar, sifted; 2 tbsp golden syrup; 1 tbsp double cream; 100 g black sugarpaste (or white sugarpaste and black food colour paste); 60 g light muscovado sugar; 240 g unsalted butter, softened; 2 tbsp whole milk; edible glue, or 20 g bag white royal icing; 2 eggs, lightly beaten; 250 g self-raising flour; 160 g light muscovado sugar; 3 extremely ripe, large bananas (or 4 small); they should be brown, not yellow; ¼ tsp ground nutmeg; 1 tsp ground cinnamon; 1 tsp baking powder; pinch of salt; 1 tsp vanilla extract; 120 g unsalted butter, softened, plus more for the tins; 1 kg white sugarpaste (or red, for a red die)

To Bake

Preheat the oven to 180°C/fan 170°C/350°F/gas mark 4. Butter two deep 13cm square cake tins and line the bases with baking parchment. If your tins are not deep, make a collar of a double thickness of baking parchment to come
