Yield: Makes 6 Martini Glasses, or 12 ‘Cupcake’ Cheesecakes
Ingredients: 2-3 tbsp finely chopped mint; indoor sparklers; 300 g mascarpone; 8 tbsp chopped mint; 300 g double cream; paper umbrellas; 120 g golden caster sugar; grated zest and juice of 4 limes; pineapple wedges; 4 tbsp rum; 60 g unsalted butter, melted; 180 g plain digestive biscuits; glacé cherries; sprigs of mint; 80 g desiccated coconut; 400 g cream cheese; 100 g pineapple, finely diced; 12 strong foil cupcakes cases (optional)
