Remember brownies are different to other cakes: they will still look undercooked when you take them from the oven, because they need to be squidgy!

Ingredients

  • 150 g unsalted butter, diced, plus more for the tin
  • 150 g 70% cocoa solids chocolate, finely chopped

Method

Preheat the oven to 160°C/fan 150°C/325°F/gas mark 3. Butter a 20cm loose-bottomed square cake tin and line the base with baking parchment.

Melt the butter and chocolate in a heatproof bowl set over barely simmering water, making sure the bowl does not touch the
