Partridges are hunted throughout France and are a much-loved game bird. This method of cooking them brings out the best of all the different ingredient flavours. Puy lentils are famous in France; they are a beautiful colour with a slightly sweet taste and I particularly love them as they keep their individual shape and do not disintegrate with cooking.
