Skate has always been thought of as a poor man’s fish, but due to its growing popularity the price has now crept up. In the summer, serve this with a crisp, green salad; in the winter, serve with creamy, saffron-mashed potatoes.

  • 100 g ( oz) unsalted butter
  • 4 x 200 g (7

Method

Melt half the butter in a large frying pan, add the skate steaks and cook over a medium heat for 5 minutes on each side. (Depending on the size of the pan, you may need to cook the steaks in two batches.) When cooked, transfer to a dish and keep warm.
