The combination of salt and sweet flavours works really well in this simple but very effective pudding: the richness will round off a light fish meal to perfection. Serve with a little whipped cream and seasonal fruit.
Place 200 g (7 oz) of the sugar in a small non-stick pan and gently heat over a medium heat to dissolve until it forms a golden caramel. Remove the pan from the heat.
