All across the Alps variations of Tartiflette are served with the additions of local mountain hams, lardons, local cheeses or mushrooms from the forests.

Preheat the oven to 180°C/350°F/Gas 4. Cook the potatoes in a large pan of boiling water for 15 minutes, until just soft. Drain and, when cool enough to handle, slice.
