When on a skiing holiday many years ago, my family and I visited a particularly good mountain bistro. The sticky pork ribs that were served there were so tasty that I had to ask for the recipe so that I could make it back at home. Here it is!

Ingredients

  • 5 garlic cloves, crushed
  • 2 cm (¾-inch) piece fresh root ginger, minced

Method

Place the garlic, ginger, onion and wine in a blender and whizz until smooth. Add the honey, soy sauce, purée, sugar and seasoning and whizz again. Smear the mixture all over the ribs, cover and leave in the fridge overnight.
