I just love bistros that serve surprise foodie delights with drinks; it’s a really good way of taking the urgency out of ordering and allows you more time to savour the menu and make your choice. In the south, where olives are abundant, it is very normal to be served a little bowl of house tapenade while you wait for your order to be taken.
