Veal needs careful cooking as it does not have much natural marbling fat running through it, so do baste as frequently as possible when preparing this bistro dish.


  • 4 tbsp olive oil
  • 4 red onions, finely sliced
  • 4 garlic cloves, crushed in their ski


Preheat the oven to 180°C/350°F/Gas 4. Heat half the oil in an ovenproof pan and fry the onions until just softened, stirring frequently. Add the garlic, rosemary, thyme, wine, vinegar and seasoning and simmer over a low heat.
