This is a dish that takes its name from the region around Nice and in many bistros you will be served fish or meat that is cooked à la Niçoise. There is also, of course, the famous Niçoise salad, which consists of quality vegetables from the area and tuna.


  • 4 tbsp olive oil
  • 4 large tomatoes, skinned and chopped
  • 4 garlic cloves, chopped


Preheat the oven to 190°C/375°F/Gas 5. Place the olive oil, chopped tomatoes, garlic, anchovies, green beans and potatoes in a large bowl, add seasoning and mix well, coating all the ingredients in the oil.

Put the vegetable mixture in a roasting tin, cover with foil and place
