When summer is in mid-flow, courgettes grow abundantly. This is a great way of cooking the flowers, and the addition of garlic and parsley is an example of how Dominique likes to put his twist on dishes.
Whisk together the flour, oil and egg with the water. Add the parsley and garlic to the batter, then leave to rest for 20 minutes.
