Nothing beats sea-fresh sardines and, with Dominique’s unusual but tasty stuffing, this is a dish that is full of flavour.

Preheat the oven to 200°C/400°F/Gas 6. Soak the bread in milk for 5 minutes. Blanch the Swiss chard for 2 minutes in boiling water, then drain and squeeze out any excess water.

Put the bacon, blanched Swiss chard, milk-soaked bread, parsley and shallot in a food processor and m
