In Wembley there is a bhajia place called Maru’s Bhajia House. Their signature dish is potato fritters served with a wonderful tomato chutney. It used to be a treat to go there after shopping for vegetables but as I don’t live so close to Wembley any more I make my own version at home. They are really quick to make and the trick is to use the starch and moisture from the potatoes to make the crispy coating rather than making a batter with water.
