Kishore Mama is one of my favourite Uncles. He’s just so funny. He has the best stories of Africa and a wonderful chuckle that reminds me of Baa. He ran Pappa’s garages in Tanzania until the 1980s and is a gifted mechanic and a fabulous cook. This is his adaptation of a typical Tanzanian dish that our farmhands and garage staff would make. It’s eaten with a steamed maize flour dough called ugali. You mush the ugali into a disc shape and use that to pick up the bharazi.<
