This isn’t technically a shaak but it works nicely with the bharazi and ugali. It’s a very simple Biting which Kishore Mama used to make at the garage on a makeshift barbecue. It would be eaten with a few beers, a few naughty Swahili songs and lots of laughter.

Ingredients

  • 3–4 green bananas
  • juice of a large lemon
  • runny honey (optional)
  • chilli powder

Method

Grill the bananas with their skins on – either on a barbecue or a very hot griddle pan. Let the skins blacken on one side for about five minutes and then flip over to blacken the other side.

Slit them open lengthways, drizzle over lemon juice and honey (if you’re using it) and then sprinkle on the chilli powder and salt to your taste.
