This is a super-fast way of jazzing up leftover rice. It takes rice from a side dish to a snack or light meal in itself. I remember this as an after-school Biting Mum would make before she went to work. We got home before she did and the cooled vagharela bhaath would be ready and waiting to eat with a dollop of yoghurt. I like it hot straight from the pan but it is also a good picnic Biting because it tastes great at room temperature too.
