There are so many recipes for parotha and so many varieties across India. Ours is very simple. These are usually a mid-morning Biting. On a weekend when a Masi or a Kaki or a Mami popped by after shopping, they’d disappear into the kitchen with my mum and after ten minutes the comforting smell of parotha would waft its way upstairs. No matter how much you wanted to concentrate on homework, it was impossible until you’d eaten at least one.
