It is becoming easier to find turmeric root nowadays and it is well worth seeking out. This is such a simple pickle but it’s a really healthy thing to incorporate into your diet. Turmeric is known for its healing properties in Ayurvedic medicine and I always make sure I have this around in winter to ward off coughs and colds.
Lay a few sheets of newspaper onto your work surface and oil your hands. The turmeric will stain both so these are protective measures! Peel the turmeric root and then slice them into a bowl – I usually go with 5mm thick circles but some people prefer matchsticks. Add the lemon juice and salt and toss well.
Transfer to a sterilised jar and make sure there is enough lemon juice to cover
