Mix the tamarind, salt, sugar, chilli and cumin with 50ml water together in a bowl. Taste and adjust the sweet/hot/sour ratio as you like it. This one is usually quite runny but if you prefer a thicker chutney then add less water. This one is perfect for Crispy Potato Fritters or even for drizzling over dhokra.
