Potato patties, such as pancakes and latkes, feature in many cuisines worldwide. Kuku sibzamini is an Iranian version, combining potatoes and eggs with a touch of herbs and spices. They are fried until soft on the inside and crispy on the outside, resulting in a delectable medley of textures and flavors.
