My aunt, Ameh Āzar, possessed a unique culinary talent, and to this day I have yet to encounter a lubiā polo that matches hers. Her not-so-secret ingredient was the aromatic and flavorful roghan kermānshāhi, a type of sheep or beef ghee originating from the city of Kermanshah in western Iran.

It never fails to astonish me how a familiar taste or aroma can evoke myriad emotions. This dish is a tribute to Ameh Āzar’s remarkable skills and enduring memory.
