Spring in the Pacific Northwest brings warmer weather and the prospect of fresh, new vegetables. Of these, I most eagerly anticipate rhubarb, which grows remarkably well in our temperate climate.
Khoresh rivās is another Iranian stew that celebrates the abundance of fresh herbs and sour flavors. Unlike the rest of the world, where rhubarb is almost always sweetened with sugar or strawberries, Iranians use rhubarb in savory dishes precisely because of its sour flavor.
