In Persian, sangak means “little stone,” and nān sangak is a traditional sourdough-based bread that’s baked on a bed of hot pebbles. This recipe is from my friend Sahar Shomali, a skilled pastry chef and the proprietor of Kouzeh Bakery in Los Angeles.
