Always a chef’s favourite, “Tarte Tatin”, the deep toffeeappled fruit, soft and sweet contrast with ice cream hot and cold. The ice cream has a real milky, dairy taste to it from the Wensleydale cheese, which is made up in the Dales in the market town of Hawes. The apples are from the vast orchards of the Roman Catholic School of Ampleforth, based in the village of the same name, only a few miles away from Harome itself.
