I’ve adapted this recipe from one by the McCoy brothers from a Yorkshire landmark, The Cleveland Tontine at Staddlebridge. This is a rich, decadent pudding, totally over the top, not unlike the brothers themselves. It is drenched in Tia Maria and served with a soothing coffee bean sauce.
