Hawes Wensleydale is made from milk drawn from the cows which graze on the limestone pastures of surrounding farms in Upper Wensleydale in the heart of the Yorkshire Dales. It is only three weeks old and is made from finely chopped curd giving a clean, mild, slightly sweet taste, which then balances well with our friend the Fat Rascal.
