Even old stalwarts can benefit from the bold treatment. A hit of chilli, the subtle fragrance of ground coriander and the green grassiness of fresh coriander livens up the classic Welsh rarebit. Cheese on toast never tasted so good.

Ingredients

  • 40 g/ oz butter
  • 1 small red onion, finely diced

Method

Melt 1 tablespoon of the butter in a small frying pan over a low–medium heat and add the onion and ground coriander. Cook for at least 8 minutes until the onion has caramelised, then add the green and red chillies and cook for another couple of minutes. Remove from the heat and set aside.
