Trust me, this is such a great recipe. One of my most controversial recipe hits has always been my anchovy and pineapple arancini, fusing sweet-and-sour Vietnamese flavours with Italian rice balls, so I’ve taken that basic idea and ran with it a little further. Zinging up the blandness of plain croquetas and playing on a seventies cheese and pineapple theme, these little cocktail bites have that secret hit of anchovy and chilli pepping them up and plenty of ooze.
