While many Brits may have had a watermelon, mint and feta salad before, this one goes a bit further into Indian chaat territory, adding the tangy spice mix chaat masala along with some crunchy gram noodles and nutritious alfalfa sprouts to the refreshing watermelon for a taste sensation.
Peel the watermelon and dice the ruby red flesh into 2cm/¾in chunks. Put it in the refrigerator for a few hours to really chill.
Meanwhile, prepare all the other ingredients.
When you are ready to serve, remove the melon from the refrigerator and stir in all the ingredients except the sprouts. Season well with salt and divide among bowls (or tip into one large serving bowl).
