Foraged greens in the spring make wonderful and economical alternatives to spinach or garlic in this classic Greek pie. Nettles are nothing to be scared of as long as you wear sturdy gloves when gathering and handling them, but can be subbed for spinach if you’re really not keen. Of course, if you’re out of season for the wild stuff entirely, the same weight of spinach spiked with a few crushed cloves of regular garlic is traditional and just as delicious.
