Tamarind and dried plums form the basis of a cooling summer sherbet recipe popular in India, Pakistan and the Middle East, so I wanted to see whether they would also work in dessert form. They do – the tamarind bringing an element of sharpness to the sweet plums, creating a very tasty combination. I think people are quite reluctant to make their own strudel pastry these days, so I’ve given you a recipe using ready-made filo/phyllo for ease.

This is quite a wonderful dessert. The sharpness of the tamarind cuts right through the sweetness of the plum. I didnt have Phyllo and used normal pastry and it was fine. Went well with clotted cream and a dusting of icing sugar. Have made this 3 times in the last week its that good and it reheats well too.
