An unusual combination, but I think the rich peanut butter is a great foil for the sharp gooseberry here, with little pops of peanut from the crunchy spread. Try to use a natural brand of peanut butter such as Whole Earth or Pip & Nut, rather than one loaded with sugar and other unnecessary additives.
Put the gooseberries in a saucepan with the sugar and cook, stirring frequently, over a low heat, until they have broken down and are mushy – about 10 minutes. Remove from the heat and leave to cool, then place in the refrigerator to chill.
