Playing on the theme of îles flotantes, these light, whipped meringues floating in a lagoon of coconut- and pandan-flavoured custard will whisk you away to the tropics. Hailing from South-east Asia, pandan extract has a grassy fragrance with hints of rose, almond and vanilla flavour, verging on coconut, and lends a beautiful green hue to the custard. I have given instructions for making your own extract, but you can also buy it from Asian grocers if you prefer.
