Candied Bacon and Bourbon Ice Cream

This is totally delicious. You may be slightly suspicious of the idea of ‘bacon ice cream’ but don’t knock it ’til you’ve tried it. Candied bacon – salty and sweet – is a taste revelation and matches with the pecans just perfectly. The addition of bourbon, besides the obvious flavour benefits, means the ice cream is soft enough to scoop without leaving it to stand for an age, which is usually a problem with homemade ice cream, so win win. A grown-up treat.
