Woodland Witch’s Froth

This might be more familiar to some as Apple Snow – an old-fashioned, but deliciously light and refreshing dessert. I thought I’d go down the Hallowe’en route and spook it up into a Witch’s Froth, flavoured with pine syrup for a hint of the deep dark forest, and we all know about fairytale witches affinity to apples…

If you don’t have pine to garnish, a sprig of rosemary will do. And go easy with the pine syrup – you don’t want it ‘pine-fresh’ – a subtle hint is all that’s needed. Y
