Ingredients: 5 sheets leaf gelatine; 350 g/12 oz black forest frozen berry mix, defrosted, plus extra frozen berries for the top; 80 g/3 oz white chocolate, broken into pieces; 1 tbsp dried juniper berries; 100 g/3½ oz digestive biscuits; 100 g/3½ oz unsalted butter; 100 g/3½ oz plain salted pretzels; 100 g/3½ oz/generous ¾ cup icing/confectioners’ sugar; 100 g/3½ oz/generous ¾ cup icing/confectioners’ sugar; 250 g/9 oz mascarpone cheese; 400 g/14 oz cream cheese; 1½ tsp vanilla extract; 30 g/1 oz white chocolate, broken into pieces; 50 g/2 oz white chocolate fudge-covered pretzels
