An elegant little dessert, these creamy tea-flavoured possets are so easy to make. They are perfectly complemented by the delicate lemon and coriander-seed shortbreads, which are also a doddle to prepare. The shortbread quantity could easily be doubled – if you’re going to the trouble of hand-making, you may as well make more and keep in a tin to nibble when the mood takes you.
