Angostura bitters, in its iconic bottle with over-sized label, is an aromatic classic of the cocktail cabinet. With a gentle herbal flavour based on gentian and numerous herbs and spices, it is one of Trinidad and Tobago’s most recognisable exports. I’ve used the bitters here to flavour a light, creamy, dairy-free granita. An icy treat to end a long hot summer’s day, it is a lovely dish for entertaining.
