Method

This pastry is as light as air, but extremely fragile, both before and after baking. Practice first with the Standard Tart Dough before working with this one.

Reduce the flour to 1 cup plus 2 tablespoons, and add ⅓ cup finely ground unblanched hazelnuts to the flour.
