The shaved honeydew is the result of using a vegetable peeler to render paper-thin slices of the fruit. This is one of those tarts that causes people to say silly things like, “My God, it’s too pretty to eat!” For my taste, nothing is too pretty to eat.

  • 1 cup granulated sugar
  • Grated zest of 1 lime (see step 1)

  1. Place the sugar in a medium bowl and zest the lime and lemon into it. Rub the zests and sugar together between the palms of your hands.
