When this dish comes out of the oven, it looks striking. As it cools, the cherries begin to wrinkle, showing the effects of the oven’s heat, but if you can live with the wrinkles, this tart will amply reward you. These are elegant, sophisticated flavors. (Please note: The Zinfandel must be red, not white or blush.)

Ingredients

  • 2 pints dark cherries, pitted
  • 2 cups red Zinfandel
  • 6 partially

Method

  1. Place the cherries in a medium bowl and pour the wine over them. Cover with plastic wrap and let marinate for 1 hour.
  2. Preheat the oven to 350°F.
  3. With a slotted spoon, transfer the cherries to a plate. Then pack them tightly into the tart shel
