TartsMedium
By Maury Rubin
Published 1995
This wasn’t always the name: Originally the “peg” was round, not square, but everyone thought that it looked like a nipple and that the tart was supposed to be a breast. This caused a minor commotion, so we changed the shape and renamed it. Looks aside, I love the way this tastes. The texture is luscious and the pear flavor is delicate and clear. Somehow, it tastes floral.
