  • ½ bunch fresh rosemary

Method

  1. Pick the thyme and rosemary leaves, then place in a bowl with the stalks and the salt. Use your hands to rub and release the flavours.
  2. Arrange duck legs in a glass, ovenproof dish in a single layer. Add herb mixture and toss to evenly coat the legs. Place in the fridge for 3 hours to cure.
