  • 1 tbsp olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed

Method

  1. Heat the oil in a saucepan over medium heat. Add the onion and garlic. Cook, stirring, for 3-4 minutes or until softened.
  2. Add chickpeas to the pan and enough water to cover the chickpeas. Bring to a boil. Reduce the heat to low. Simmer for 15-20 minutes or until the chickpeas are overcooked and mushy. Strain over a large jug or bowl to reserve the cooking liqui
