Lobster coral, rubbed through a fine sieve, added to Mayonnaise, makes Red Mayonnaise.

Finely chopped parsley leaves pounded with a small quantity of lemon juice, strained through cheese cloth and added to Mayonnaise makes Green Mayonnaise; or Spinach Green may be used if desired.
