Tuna should be grilled on a high heat to char the outside but leave it raw in the middle. This only takes 2 to 3 minutes, but leave it a touch longer if you like it cooked through.
Place white wine in a small saucepot over a medium heat. Add butter piece by piece. Add lemon juice and seasoning once butter has melted. Put in a little bowl.
Infuse 2 cloves fresh garlic with olive oil in a little bowl. Set aside.
Brush tuna with olive oil and season with salt and freshly ground black pepper.
Cook in a cast iron pan directly over the flames for 1 minut
