Smear the beef fillet with the wholegrain mustard and tie with water-soaked cotton string. Thread sprigs of rosemary and other herbs through the string. Sear the beef fillet over a very warm direct fire and season with coarse salt and freshly ground black pepper. Scatter the beef fillet with balsamic vinegar. Return to a medium heat until cooked.
